Muhudu kukula translates as 'sea chicken', and one taste explains the name: the starry triggerfish dries into firm, white, almost poultry-like flesh with a milder, sweeter character than any other karawala.
A specialty of Sri Lanka's coastal drying yards, it is cleaned, skinned of its tough hide, salted lightly and sun-dried slowly to keep the flesh supple. Its gentle flavor makes it the karawala people recommend to newcomers — and the one old hands quietly keep for themselves.
