Nutmeg is the seed of Myristica fragrans, a tree that thrives in the humid hills of Sri Lanka's central highlands. Each fruit yields a single nut wrapped in a lace of crimson mace — two spices from one harvest.
Our nutmegs are shade-dried in the shell until the kernel rattles, then shelled and graded by size and density. Whole nutmeg keeps its volatile oils far better than pre-ground powder; grated fresh, it carries a sweet, resinous warmth that ground nutmeg loses within weeks.
