Sri Lankan black pepper is prized on world markets for its high piperine content — the alkaloid that gives pepper its heat. Grown in mixed spice gardens under the island's monsoon climate, the berries develop a bigger, bolder bite than most origins.
Berries are picked at exactly the right maturity, blanched, then sun-dried on woven mats until their skins wrinkle to a deep charcoal black. The result is a peppercorn that grinds clean, blooms in hot oil and carries citrus and woody notes behind the heat.
