Outrigger boats land the morning catch in coastal villages from Negombo to Tangalle. We buy directly, the same day, from fishing families we have worked with for years.

Grading is still done the old way: by eye, by hand, by weight in the palm. Cinnamon rolled to C4, cloves heavy with oil, pepper dense with piperine — lots that don't make the grade don't make the boat.
