Cardamom is the world's third most expensive spice, and Sri Lanka's cool, wet Knuckles range grows some of the most aromatic pods anywhere. The capsules are picked by hand just before full ripeness, when the seeds inside are black, sticky and packed with oil.
Gentle drying preserves the pods' green color — the visual mark of quality — and their heady mix of eucalyptus, citrus and floral notes. Because the seeds lose aroma quickly once exposed, we ship cardamom in its whole pod, the way top blenders and roasters insist on receiving it.
