Keeramin — dried sardinella — is one of Sri Lanka's best-loved dried fish. Small, silvery and rich in flavor, it is the karawala that goes into fiery theldala stir-fries, coconut-milk curries and rice-and-curry plates across the island.
Our keeramin is bought fresh from coastal fishing communities, cleaned, salted in careful proportion and sun-dried on raised racks in the sea breeze. Slow, natural drying concentrates the fish's savory depth while keeping the flesh firm, never brittle.
